American BBQ Tray with Maple Bacon & BBQ Pig Wings - Don KRC Foodservice

Method:

For Pig Wing

  • Step 1: Remove COOKT Pig Wings by DON and KR Castlemania from the vacuum pack and place into a gastro tray with some of the juices.
  • Step 2: Coat pig wings with half of the BBQ sauce, cover with foil and bake at 180 °C fan-forced for 20–25 minutes until hot through (≥75 °C core).
  • Step 3: Remove foil, baste with pan juices and remaining BBQ sauce, then return to oven uncovered until sticky and caramelised. 

For Maple Bacon

  • Step 1: Place KR Castlemaine Streaky Bacon Rindless into a gastro tray and brush with maple syrup. 
  • Step 2: Bake at 180 °C fan-forced for 10–15 minutes until caramelised. Brush bacon halfway through baking. 

For Coleslaw

  • Step 1: Combine cabbage and carrot in a bowl.
  • Step 2: Whisk dressing ingredients until smooth. 
  • Step 3: Toss through vegetables just before serving to keep crisp. 

For Mac & Cheese

  • Step 1: Melt butter, stir in flour, cook for 1 minute.
  • Step 2: Whisk in warm milk, cook until thick and no more lumps.
  • Step 3: Stir in cheese off heat until smooth
  • Step 4: Season with salt & white pepper.
  • Step 5: Fold through pasta and hold warm.

For Corn

  • Step 1: Steam and grill corn until tender.
  • Step 2: Toss with butter while hot and season lightly.

For Pickled Red Onion

  • Step 1: Combine vinegar, water, sugar and salt until dissolved. 
  • Step 2: Pour over sliced onion and allow to pickle for at least 30 minutes (or overnight). 

ASSEMBLY:

  • On each tray, place
    • (1) Pig Wing 
    • (2) Maple Bacon strips  
    • (1) Corn cob 
    • 60g Coleslaw 
    • 80g Mac & Cheese 
    • Pickled Red Onion 
    • Bread & Butter Pickles 
    • Sliced White Bread 
    • Burnt Ends (if using)
